First we slow roast (for 7 hours) bone in lamb shoulder rubbed with rosemary, chili oil, lemon zest and grated garlic in a bed of white wine, then we take it off the bone and send with whole roasted garlic and pan juices. On the side, fresh oranges and fennel with a lemony dressing. Dairy free, Gluten free.
