Quantity:
24oz shredded cheese, 1/2 lb Mexican Chorizo, 8 six inch flour tortillas
Baked Cheese (Queso Fundido) with Chorizo
1. In a cast iron braiser, or other oven proof pan, sautee chorizo with just a drop of olive oil, breaking apart with a wooden spoon until fully cooked through.
2. Preheat oven to 375.
3. Remove chorizo from braiser and set aside. Don't wipe out the braiser.
4. Evenly sprinkle cheese in braiser then top with cooked chorixo, piling in the middle of the pan.
5. Bake at 375 uncovered for 12 min, check often after 10 min and continue cooking until the cheese is slightly browned and bubbling.
6. While cheese is baking, heat tortillas one at a time on a dry skillett, and store in a tortilla warmer with paper towels. Alternatively, put all 8 tortillas in a glass tortilla warmer and microwave 2 min.
7. Serve immediately with your favorite salsa!
