I made this over and over and it was missing something... then I tried the recipe adding a drop of truffle oil to the Alfredo sauce and Bam! That was it. The pan seared steak is amazing alongside fresh Rafetto's tagliatelli tossed with our house made truffle cream sauce and topped with Gorgonzola. A meal you will not soon forget!

Here is what you'll need to add to make this AMAZING meal:
Olive oil, salt & pepper and a cast iron skillet or grill.
How to Prepare:

The steaks will take no time at all to cook so I recommend preparing everything else first, then sear and finish the steaks. Keep in mind that once you sear and finish the steaks they need to rest a few min and will continue cooking while they rest.

1. Preheat the oven to 400 degrees. To cook the steaks, season generously with salt and pepper all over. Heat a cast iron skillet or other oven proof pan on the stovetop with a little olive oil. When oil is very hot put the steaks on the pan and cook without moving for 3 min. Then flip and cook 4 min more, again without moving. After the 7 min cooking time, pop the skillet in the oven and cook for4 min. Remove and let the steks rest for 3 min. This will get you medium rare steaks. If you like it more well done, add 1 min for medium, 2 min for med well and 4 min for well done.

While the steaks are finishing in the oven, boil the pasta for 5 min. Drain. In the same pot, heat the gorgonzola cream. Once hot, toss the pasta back into the pot and mix.

To serve, slice steaks, plate pasta next to steak, top both pasta and steak with crumbled Gorgonzola.
